
Summer is when I usually make different types of watermelon 🍉 salad as it goes extremely well with barbecue. Always been my favorite salad as it’s so refreshing and so easy to make. This time I decided to add some arugula and sweet peppers simply because I had some lying in the refrigerator. It turned out delicious and we loved it.
The sweetness of the watermelon melon provides a good contrast to the mild spice of the sweet peppers. The red onions and cucumbers lend a traditional touch. The herbs add to the final flavors. In addition to the health aspect, adding arugula made the salad look so colorful. Loved it.

Ingredients
- 4 cups watermelon
- 1/4cup cucumber chopped
- 1/4 cup red onion
- 1/4 cup arugula
- 1/4 cup chopped sweet peppers
- 1/4 cup mint chopped
- 1/4 cup parsley chopped
- Salt and pepper to taste
- 2 tbsps. lemon juice
- 2 tbsps. olive oil
- 1 tbsp honey
- 1 tsp crushed red pepper
Directions
- Peel the skin of watermelon and dice them into cubes.
- Dice cucumber, onions and sweet bell pepper.
- Roughly chop arugula.
- Chop mint and parsley.
- Combine all these in a bowl.
- Squeeze lemon juice and drizzle olive oil
- Stir in the honey
- Season with salt, black pepper and red crushed pepper.
- Mix everything together.
- Serve chilled.
